Connect Raspberry Pi with Vegetronix VH400 Soil Moisture Sensor

Hello, I am trying to get parts so I can connect the Vegetronix sensor to a Raspberry Pi Model 3B for a smart garden project. I am looking for help on buying an ADC that will be compatible with the specifications of the sensor. The sensor outputs a 0-3V analog signal and I believe I have found a ADC that should work but want to make sure.

The datasheet for the MM32 chip says that it supports Vin min: Vss-0.3 and Vin max: 5.5V. There are other voltages in the datasheet that make it a bit unclear but want to make sure I am looking at the correct section.
