My old (about 35 years) microwave has a multi-digit green fluorescent display, and has been in constant daily use since new. I have just noticed after so many years that the display is hardly readable- I have been using it on the same setting, so never really took much notice of the display. Do these "wear out", like tubes? Or is it possible the HV supply is faulty? What voltage can I expect to see on the HV side of the supply?

Have a look at this discussion. "Rejuvenation" of a FL-display seems to be possible with some careful application of high current. Proceed at your own risk...

Also check the power supply. Failed electrolytic capacitors may obviously cause similar symptoms as described here.
