Help pick right hardware for project

Hey Everyone,

Our group is working on designing a medical device for our senior design project and I need some advice on the hardware choices. Quick summary of the device: we will have a force and/or flex sensor on a patients thumb that will measure how much force is applied when you send a small pulsing current to the muscle using electrodes, the sensor data should be sent to wireless display that would graph the data. We also want to change some parameters using the touch screen. So what I have in mind is having two pcb boards with each board having it's own MCU and RF transistor for sending data back and forth. After doing some research I have these parts in mind. Can somebody tell me if there is anything majorly wrong with my hardware choice or if anything can be improved. I am pretty new at this, so any advice is appreciated!
