How is it possible to control the output signal amplitude for op-amp

How is it possible to control the output signal amplitude (Vout) for any particular waveform generator so
as to satisfy a particular designing criterion ?
I am referring to waveform generators using op amp 741 like
->ex.square wave generator using astable multivibrator
->the output voltage jumps from +Vsat to -Vsat how can i make it to something else that I want.

The gain of an opamp circuit is usually controlled using resistors and a feedback loop.

Show us a diagram of your circuit for further duscussion.

The output voltage jumps from +Vsat to -Vsat as shown in the waveform

It is supposed to do that, that is the operating principle of this oscillator. If you want another amplitude, you need to scale down the output by e.g. a resistive divider.

Can we decrease the supply voltage?
ie. +Vcc and -Vee (since saturation voltage depends on the supply voltage)

Yes you can. As long as the supply voltage meets the operating range of the opamp.
