Me too, but tonight it's my treat: Ham and potato casserole.

Three layers of Yukon Gold potatoes skinned and sliced into 1/4"
rounds and laid out into a 2 qt buttered casserole dish, each layer
dusted with flour, salt and pepper, sprinkled with coarse juliennes
of Honey-baked ham and a few pats of butter.

Just the kind of warm we need in order to get over the gray days
that have settled over us recently.

Sounds good. I'll try it when Mo is out of town... she's not much of a
meat eater.

I just did this:

Get a salmon fillet and find a pyrex baking dish just a little bigger.
Get one of those boxed rolled-up pie crusts, roll it a bit squarish,
and line the pan with half flopping over one side.

Sautee some chopped leeks, celery, and mushrooms in butter, add a bit
of white wine and maybe a little chicken broth, maybe a bit of garlic,
season, reduce a bit.

Pour some of that into the pasrty shell, add salmon, add rest of the
gunk on top, then fold the loose pastry end over the top and tuck in.
Bake.

Came out pretty good.
Sun's out now, must have been the right thing to do. ;)

Anyway, the last decision: Cheese on top? ... Naah.

Tried cheesey polenta? Just get the stuff in the plastic sausage tube.
Add some water and boil until it's smooth. Add various cheeses, like
parmesan+white cheddar+whatever. Works great with grits, too.

Oops... I left out three things:

1. Preheat the oven to 350F
2. When the thing is built, pour in enough whole milk to almost
cover everything.
3. Takes about an hour until it's done. (When the potatoes are
soft.)

Sounds good. We get really good salmon filets from Sam's Club so
I'll try it this weekend. I'll probably make the shell from scratch
since those boxed mixes are over the top in sodium.

For me, anyway. :(

Sure they do. And I just love it when something gets garnished with
mint leaves... but it draws stares from across the restaurant ;-)

Sheeeesh yourself Bobo. Italian parsley is great in many dishes and
salads.

Also fresh (basil, tomatoes and mozarella) and balsamic vinegar make a GREAT
summer salad.

Another plant worth growing is Lavender
It's a natural bug repellent

Let me first say that I have nothing against homosexuality. But I know for a fact that those soc.men posters are homosexuals in disguise. On top of that they have no money and are very whiney. I would prefer to date fat and ugly chip designers. That a soc.man posters. Those people are just worthless freaks with no brains. Chip designers, have no social skills either but at least are not as whiney and mean spirited.

You folks are sick, and have no concept of what food can be.

How hard is it to make polenta? Pastry takes skill. Farm raised
salmon is the best of the bunch - but no winner if you are trying to
meet or exceed the "cuisine" of a good (American) restaurant.

And one of you brags about spending 2K/mo on fine dining? Take a
cooking course with the money from a single month.

of Iceberg lettuce with a sauce made from Pico de Gallo (finely
diced tomatoes, yellow onions, scallions, garlic, Jalapeno and
Serrano peppers, lemon juice, salt and vinegar) mixed with sour
cream, crumbled Feta, and a little milk mixed in just to make it
pourable over the lettuce.
