Relay basics please

I want to use a simple pushbutton and a relay to form a DPDT switch (as in
guitar stompboxes). Suppose a "latch" relay would do it... I assume the
pushbutton is the actual "push" that moves the relay to the second state and
back? Should the the button break the current or open it?

How about a DPDT push-on/push-off switch and no relay?
