When charging 100 AH lithium battery.
Have two solar panel 100 watt each 12 volts each.
Do need more current or voltage ,if hookup solar panel parallel would give more current or should give more voltage connect in series when charging the lithium battery.

What voltage is your lithium battery? Assuming 12V......

More current = shorter charging time but you must meet the absolute minimum voltage levels required to charge the battery in the first place and 12V won't cut it. Use the right charge-controller for the system and leave it to its own devices.

you set the volts to the batteries maximum volts, then more amps the better, but it can be dangerous to do high amp loads for it.
you get the extra amps with the stepdown transformer, but it can destroy batteries, so its not exactly being nice to the battery doing it.
super capacitors are the best at charging hours of electricity in matters of seconds.

That's why @kellys_eye recommended the use of a suitable charging controller.

Super capacitors can be quickly charged but are a far away from the capacity a rechargeably battery offers - at least as long as cost plays a role.
Besides, the discharge behavior of a supercap is completely different from the behavior of a battery. A capacitor's voltage will decrease steadily when being discharged. A Battery will hold its voltage (almost) at a fixed level only to decrease rapidly when the end of charge is reached.
