Lots of 12V PWM controllers on Ebay. If yours is a 'brushed' motor then there's loads of solutions.

To begin with, you have not yet determined what type of motor it is.
If it is 3 phase brushless, you won't do it with PWM.

If it is a brushed type motor, you certainly will not find a pwm device on Ebay capable of those currents, at least not of any ,what would be considered, quality.
If you do find any off-the-shelf pwm controller capable, be prepared to pay many times more than the cost of the motor.

As my grandfather used to say, if you want a Ferrari , buy a Ferrari.

so kellys_eye says that there's loads of options but bluejets says that I won't be able to find a quality PWM controller that is capable of those currents, just wondering because they are contradicting comments?

To be fair, Kellys_eye said lots of pwm controllers, did not mention anything about or refer to anything in your current requirement range.

As the saying goes, why don't you "suck it and see" (check for yourself)?
Currently though you still have no idea what type of motor it is.

............... best you find out before replying in a minute by minute description.

There are PWM controllers out there for BLDC motors, I have fitted a few to bike conversions, practically all use BLDC now.
Details of the present motor would help.
Although yours may be running at one speed, it still requires a drive or means of commutation, when running off of a DC source.

Strongly doubt that the winch uses a BDLC motor. If its original control was a simple on-off switch (or push button) then it's a brushed motor and PWM controllers are 'ten-a-penny'.

Bluejets mentions the key word 'quality' - under this meaning I would agree that the 10-a-penny devices should be bought with a tongue-in-cheek approach to their specifications i.e. if you need a 10A controller buy one rated at 50A minimum.

I call machine-mart and the man on the phone stated it wont be a 3 phase because it's 12volt, and it'll be an induction motor, I said does it have brushes he said no because its induction motor so it is infact a brushless DC induction motor!!

so procceding to the next step, I want to control its speed not sure how to at the moment but I'm leaning toward a PWM controller!

I could be more specific but why waste my time.........best you look up the physics on motors for yourself.
And before you ask, yes I do know, qualified electrical contractor and electronics for over 55 years now.

All you have to do is walk to any street corner and see some 12 year old playing with a quad drone.
There is an example of (most times at least 4) 3 phase brushless induction motors all controlled via esc (electronic speed controllers)
Those in turn are controlled via PPM signal from an r/c receiver, which originates from an r/c transmitter.

oh yeah, stupid me, I'm using a 3 phase drone motor in one of my projects with an esc and arduino, slipped my mind! just goes to show you shouln't take everything as gospel thanks Mr Bluejets

so then if I were to use the ferrari analogy where can I get a variable speed winch from? and I'll just buy one of those just throwing it out there not asking you to look for me I will research on my own also but if you do know where on the off chance. I am struggling to find one!!

That's reasonable. But applying the same factor of 5, that means the OP would be looking to source one rated at 5 x 114A = 570A !
